Paprika and Pink Peppercorn Prawns

Taking only 15 minutes from kitchen to table, this easy recipe for grilled prawns is made speedily in the oven but are also delicious on the braai. Simply season, grill, peel and dip into a lightly spiced mayonnaise flavoured with Spanish smoked paprika and serve with generous glasses of 2023 La Motte Vin de Joie Rosé.

  • 30-40 king prawns, defrosted and cleaned
  • 25ml Spanish smoked paprika
  • 20ml pink peppercorns
  • Olive oil
  • Sea salt
  • 200ml good quality mayonnaise
  • 50ml lemon juice

Preheat the oven on its grill setting. In a large bowl, toss the prawns with 20ml of the paprika, the pink peppercorns and a good glug of olive oil. Season with salt and arrange the prawns on a rack within a roasting tray. Grill the prawns for 3.5 minutes per side.

For the mayonnaise, combine the leftover 5ml of paprika with the mayonnaise and lemon juice. Serve the prawns with the mayonnaise, lemon wedges and lots of napkins.
