Harvest Focaccia Recipe



Dough mix

290 g  Bread Flour

290 g Cake flour

15 g Salt

400 g Water

10 g Instant yeast

20 g Olive oil

1 tsp Chopped rosemary

Grape wine mix

120 g red grapes

70 g Sugar

100 ml Red wine


150 g Grapes

Flaked salt

Olive oil

Rosemary leaves


Preheat oven to 200 degrees

Grape mix

In sauce pot combine the grapes, sugar and wine. Bring to a boil and cook out for 5 min.

Remove from the heat and cool.

For the dough

Add the flours, water, salt, yeast, olive oil and rosemary into a dough mixed and mix at medium speed until the dough starts coming together.

Add the wine, grape mixture and mix on a low speed till incorporated. Then at medium speed for 5 minutes.

Place dough in a oiled tray and cover. Allow to proof for 1 hr 20 min with folds every 20 minutes.

After the complete proof, tip dough out on an oiled surface and portion into your desired sizes.

Place the dough on a baking sheet or baking tray. Sprinkle olive oil all over and poke holes with your fingers.

Put grapes, salt and rosemary on top and bake for 12 - 15 minutes at 200 degrees Celsius.

When golden brown, remove and finish with some more olive oil.
